Rock Cakes

What You Need (makes 10-12)

  • 75g (3oz) sunflower margarine
  • 200g (8oz) self-raising flour
  • 75g (3oz) soft brown sugar
  • 100g (4oz) sultanas, raisins or mixed fruit
  • ½ teaspoon mixed spice, cinnamon or ginger
  • 1 egg (beaten)

How To Make It

  1. Pre-heat oven to 200C/400F/Gas Mark 6
  2. Rub the margarine into the flour with clean hands until it resembles breadcrumbs.
  3. Add fruit, mixed spice, sugar and egg.
  4. Mix with a fork until a sticky dough forms.
  5. Using two forks divide mixture into 8-12 rough balls and place on a greased baking tray.
  6. Bake for 12-15 minutes until golden, cool on a wire rack.
  7. Store in an air-tight container.
