Roasted Red Peppers

Serve with nut roast and tomato and coriander sauce or as a vegetable with any festive roast.

What you need

  • 4 red peppers
  • 1-2 tbsp olive oil

How to make it

  1. Wash the red peppers and deseed. 
  2. Cut lengthways into wide slices and place on a oven-proof tray.
  3. Drizzle on a little olive oil and roast in a hot oven 220°C/ 425°F/Gas mark 7 until they just start to burn.
  4. Serve.
