Lentil Soup

What You Need (serves 4)

  • 1 litre vegetable stock (try low-salt stock cubes).
  • 200g (8oz) red or yellow lentils.
  • 1 leek (chopped).
  • 2 medium carrots (grated or cut into small pieces).
  • ¼ small turnip (grated or cut into small pieces).
  • 1 onion (chopped).
  • Black pepper – add to suit your taste.

How To Make It

  1. Bring the vegetable stock to the boil.
  2. Add the lentils and cook for 10 minutes, stirring occasionally.
  3. Add the vegetables.
  4. Bring back to the boil, simmer and cook for 30 minutes.
  5. Add the pepper, check seasoning. Serve with crusty bread.
